Recipe for Tortilla Borek Rolls.

Tortilla Borek Rolls

Ingredients:

  • 1 package of frozen tortilla’s
  • Sesame and/or black seeds to sprinkle on the top

Filling:

  • 1 onion
  • 1lb. spinach
  • 1 tbsp oil
  • 2 oz. crumbled feta cheese
  • 4 mid-size potatoes
  • cooked meat pieces
  • salt
  • ground black pepper

Liquid sauce:

  • 3 eggs
  • 1 cup vegetable oil
  • 1 cup milk

Preparation:

  1. The day before cooking put frozen tortillas in the fridge for defrosting overnight or defrost them in the microwave if you didn’t have time to do it otherwise.
  2. Prepare the filling you like. You can use feta cheese and parsley, meat or potato fillings for this borek. In our case we used feta cheese+spinach and mashed potatoes+meat ones. For the spinach filling : In a frying pan combine oil with chopped onion. Stir and cook until onion is tender. Add pre-washed and chopped spinach and sauté until spinach looses it’s liquid. Season with salt and pepper. Put aside to cool and add crumbled feta cheese. For the potato and meat filling: Boil washed and peeled potatoes until soft, then mash them adding some salt and pepper. You can make the puree more delicious by adding fried onions, a bit of tomato paste and parsley. In our case we just added cooked meat cubes for better taste.
  3. In a large bowl mix the ingredients for the liquid sauce and whisk till the mixture is homogeneous.
  4. Apply the liquid sauce over each tortilla using a kitchen brush. Put 2 tbsp. of filling on one edge of the tortilla and roll it up. Place on a well-greased pan. Continue rolling.
  5. Spread the remaining liquid sauce over the rolled tortillas and sprinkle sesame and/or black seeds.
  6. Preheat oven to 350F and bake until the tops get golden in color.
  7. You may cut them into halves as they might be a little bit long for serving.
  8. If you like the borek to be more spicy you can use red chili pepper in the fillings.
