{"id":1123,"date":"2011-11-14T07:06:49","date_gmt":"2011-11-14T15:06:49","guid":{"rendered":"http:\/\/pacificasv.org\/?p=1123"},"modified":"2016-09-12T20:20:36","modified_gmt":"2016-09-13T03:20:36","slug":"tortilla-borek-rolls","status":"publish","type":"post","link":"https:\/\/pacificainstitute.org\/bay-area\/2011\/11\/14\/tortilla-borek-rolls\/","title":{"rendered":"Tortilla Borek Rolls"},"content":{"rendered":"<p>Recipe for Tortilla Borek Rolls.<br \/>\n<!--more--><\/p>\n<p style=\"text-align: center\"><a href=\"http:\/\/pacificasv.org\/wordpress\/wp-content\/uploads\/2011\/11\/DSCN1712_small.jpg\"><img fetchpriority=\"high\" decoding=\"async\" class=\"size-full wp-image-1124 aligncenter\" src=\"http:\/\/pacificasv.org\/wordpress\/wp-content\/uploads\/2011\/11\/DSCN1712_small.jpg\" alt=\"Tortilla Borek Rolls\" width=\"605\" height=\"441\" \/><\/a><\/p>\n<p><strong>Ingredients:<\/strong><\/p>\n<p><strong> <\/strong><\/p>\n<ul>\n<li><strong><span style=\"font-weight: normal\">1 package of frozen<span style=\"color: #000000\"> tortilla&#8217;s<\/span><\/span><\/strong><\/li>\n<li><strong><span style=\"font-weight: normal\">Sesame and\/or black seeds to sprinkle on the top<\/span><\/strong><\/li>\n<\/ul>\n<p><strong>Filling:<\/strong><\/p>\n<ul>\n<li>1 onion<\/li>\n<li>1lb. spinach<\/li>\n<li>1 tbsp oil<\/li>\n<li>2 oz. crumbled feta cheese<\/li>\n<li>4 mid-size potatoes<\/li>\n<li>cooked meat pieces<\/li>\n<li>salt<\/li>\n<li>ground black pepper<\/li>\n<\/ul>\n<p><strong>Liquid sauce:<\/strong><\/p>\n<ul>\n<li>3 eggs<\/li>\n<li>1 cup vegetable oil<\/li>\n<li>1 cup milk<\/li>\n<\/ul>\n<p><strong>Preparation:<\/strong><\/p>\n<ol>\n<li>The day before cooking put frozen tortillas in the fridge for defrosting overnight or defrost them in the microwave if you didn&#8217;t have time to do it otherwise.<\/li>\n<li>Prepare the filling you like. You can use feta cheese and parsley, meat or potato fillings for this borek. In our case we used feta cheese+spinach and mashed potatoes+meat ones. For the spinach filling : In a frying pan combine oil with chopped onion. Stir and cook until onion is tender. Add pre-washed and chopped spinach and saut\u00e9 until spinach looses it&#8217;s liquid. Season with salt and pepper. Put aside to cool and add crumbled feta cheese. For the potato and meat filling: Boil washed and peeled potatoes until soft, then mash them adding some salt and pepper. You can make the puree more delicious by adding fried onions, a bit of tomato paste and parsley. In our case we just added cooked meat cubes for better taste.<\/li>\n<li>In a large bowl mix the ingredients for the liquid sauce and whisk till the mixture is homogeneous.<\/li>\n<li>Apply the liquid sauce over each tortilla using a kitchen brush. Put 2 tbsp. of filling on one edge of the tortilla and roll it up. Place on a well-greased pan.
